At Koltz we produce our flagship wines from our own grapes grown on our Blewitt Springs vineyard. This ensures that we have total control of grape quality, producing low yielding, high quality grapes hand picked at exactly the right time and then immediately processed in our onsite winery.
The best of our shiraz, used to make The Pagan and The Wizard, are hand picked into drying trays in the vineyard and then placed in our winery to dry for up to 7 weeks. This process, used to make the great amarone wines, intensifies the flavour and just as importantly allows us to create complex wines with elegance and structure.
On our vineyard we have planted two Italian varieties, Sagrantino and Sangiovese which are from central Italy and are well suited to the McLaren Vale climate.
Our Eccolo range is produced from Rob and Zof Bottins vineyard in Balhannah in the cool climate of Adelaide Hills. We endeavour to produce wines from this vineyard that are true to the varieties and reflect the food friendliness these varieties are famous for.
